PLUS ULTRA SNACK BOX DELIGHT

Here are some details on the contents of the Plus Ultra Snack Box Delight!
Thai Tea from Mijo Gordito
Asia Keovorabouth and Pepe Camero met in East Nashville in late 2018 at a knife shop off Woodland Street. With a combined 37 years within the industry, what started with tamales and dumplings sold out of their driveway quickly snowballed into pop ups across the city. Mijo Gordito, my son the little fatty, is their answer to join their mutual love for food. Chef Pepe with his classical training at Le Cordón Bleu in Austin and heavy resume is able to streamline Asia's family's recipes for production as well as his own. They now create custom menus for events, consulting for new hospitality concepts, corporate catering, as well as provide limited opportunities for hot food to their fans with all of their love in their little 300sq foot kitchen rooted in The Shoppes at Fatherland. You can sample their pop ups by keeping your eyes peeled to their Instagram stories, where they release their schedule for their heavily foodcentric friends.
Location: 1006 fatherland St., #206, Nashville, TN
Empanadas from Charmed Flavors
Charmaine, the woman behind Charmed Flavors and these vegetarian empanadas, grew up celebrating, bonding and developing a sense of gratitude with her family over the food at the table! When she moved to Nashville, she took the opportunity to showcase her passion for cooking and pay homage to her Filipino roots by starting an in-home meal prep service. This service helps take the stress off of families and assures that their food is made from the freshest ingredients in the convenience of their own home. Charmaine also offers small-scale catering for those who are missing homecooked Filipino staples. If you need a break from cooking or want to host a little gathering with family and friends but don't want the hassle of prepping, let Charmaine add some charmed flavors to your dinner!
Thai Curry Puffs from Koala Kafe
Tima runs Koala Kafe and is a self-taught home baker, got her start selling funnel cakes and drinks at the Lao temple few years ago! These Thai Curry Puffs are vegetarian and inspired by her grandmother that served these at her restaurant in Michigan.
Ube Mochi Donut from Love4Boba
Mochi Donuts are made from mochi flour, giving them their chewy texture. You can always snag these at Love4Boba down in Smyrna. Love4Boba is owned by Somsack and Lisa Maniphonh. They were serving food at local events for almost a decade under the name Taste of Lao. During the pandemic, their love for food led them to opening a brick and mortar. They focused on menu items that would be unique and hard to find in Middle Tennessee and officially opened in March of 2022. Location: 6528 New Nashville Hwy, Smyrna, TN 37167

Pandan Honeycomb Cake
Pandan leaves are found across Southeast Asian and used in a lot of different desserts because of their vanilla flavor profile. This Pandan Honeycomb Cake (Banh Bo Nuong) is Vietnamese. There actually isn't any honey in the dessert and "honeycomb" actually refers to the appearance of the cake's cross-section. This was made by one of our local community memebers!
API Middle Tennessee has a food-centered project coming up called More Than a Menu. Make sure to give it a follow to keep up with the different events we will be having in the future!
